Valentine’s Day Recipe: Frozen Chocolate Peanut Butter Banana Bites

Looking for a sweet treat that doesn’t wreak havoc on your hormones this February? Give this chocolate peanut butter covered frozen banana recipe a try this Valentine’s Day! I curated this recipe in my own kitchen, so if it isn’t good, you can blame me ;)
This fertility-friendly recipe has minimal added sugar (the only added sugar is in the chocolate chips - the rest is naturally occuring!), all natural ingredients with no additives that mess with your hormones. Bananas are rich in potassium to provide good electrolyte balance. Peanut butter and butter contain protein and fats to help promote sustained energy and prevent blood sugar crash. Vanilla has antioxidant properties to fight free radicals in the body. Lastly, chocolate is rich in magnesium, which helps reduce inflammation and helps with many essential functions of the body. Since we are not baking, you don't need to be precise with measurements; you can play with the ratios of these ingredients to meet your own liking for flavor. Frozen Chocolate Peanut Butter Banana Bites
INGREDIENTS:
¾ - 1 cup chocolate chips (sub allergy-friendly choc chips for allergies/dairy free option)
⅓ - ½ cup peanut butter (omit for peanut allergies)
2 Tbsp butter (sub coconut oil for dairy free option)
½ tsp vanilla
2-3 medium-ripe bananas, sliced
DIRECTIONS:
Line a cookie tray or cutting board with parchment paper
Slice bananas into desired size and thickness
Line tray with bananas
Place tray in freezer for 1-2 hrs (or until frozen)
Place chocolate chips, peanut butter and butter in microwavable container (preferably a tall and thin container to make dipping easier - I use a 1 cup glass pyrex measuring cup).
Microwave chocolate mix for 30 seconds, then stir
Add in vanilla, stir
Microwave chocolate mix (about 15-30 seconds) and stir again until smooth, being careful not to overheat (can burn the chocolate)
Once chocolate mix is smooth/desired thickness, remove bananas from freezer and dip in chocolate mix, covering as desired, then place bananas back on tray once dipped
Place tray back in freezer to harden for another 30-60 mins, then take out and enjoy!
